This cookie is perfect! It’s soft, chewy, and loaded with buttery and oatmeal flavor. It’s a small batch recipe, making it quick and easy to make when you’re craving something sweet.

Growing up in an Italian family, oatmeal didn’t really make its way into our baking all that much.  We grew up with my Nonna’s famous pizzelle, and her chocolate crinkle cookies (links coming soon). So, I didn’t truly understand the comforting flavours that oatmeal brings until I was well into my teens. When I tasted my first oatmeal cookie, I fell in love with the simplicity of it right away. I was determined to create the perfect oatmeal cookie that was easy enough I could quickly bake up a batch on a whim.

With just a few simple ingredients, that you probably already have in your kitchen, you can quickly whip up a batch and enjoy these deliciously soft and chewy cookies in less than 30 minutes. 

What you will need:

  • unsalted softened butter
  • granulated sugar
  • egg
  • vanilla
  • all-purpose flour
  • baking soda
  • salt
  • quick oats

This recipe makes a small batch of cookies but it can easily be doubled or tripled for a larger group of people.  Trust me, you’re going to need the larger batch when entertaining because they will quickly disappear off your sweet table.

Let’s start baking!

Preheat your oven to 375º and prepare your baking tray before you start to mix your ingredients. Now you’re ready to start making some cookies!

I like to start off by preparing my dry ingredients so I can easily add them to my wet ingredients when needed. In a small bowl mix together the flour, baking soda, and salt.

Using a stand mixer and a large bowl, with the whisk attachment, whip together the butter and both sugars until it is lighter in colour and creamy.

Mix in an egg at medium speed. Then mix in the vanilla. Make sure that everything is well blended.

Using a wooden spoon, mix your dry ingredients into the wet ingredients. Making sure the ingredients are fully incorporated but do not over mix. Now, gently fold in your quick oats.

If you would like to add raisins or chocolate chips, you can add them in at this time. Make sure to fold them into the mixture. Add about 1/2 cup of your bonus ingredient. If you like a little more, go for it!

Scoop about 1 tablespoon of cookie dough onto a lined baking sheet. Lightly press the dough down about halfway.

Bake for about 8-10 minutes. Let them cool on the pan for a couple of minutes, then transfer them onto a cooling rack.

Ingredients

  • 1/2 cup unsalted butter, softened

  • 1/2 cup granulated sugar

  • 1/2 cup packed brown sugar

  • 1 egg

  • 1/2 tsp vanilla

  • 1 cup all purpose flour

  • 1/2 tsp baking powder

  • 1/2 tsp salt

  • 1 1/2 cup quick oats

Directions

  • Preheat the oven to 375º and line baking tray with parchment paper.
  • In a small bowl, start by mixing the flour, baking soda and salt together.
  • Using a stand mixer with the whisk attachment, cream together the butter and both sugars.
  • Mix in an egg, then add in the vanilla. Make sure that everything is well blended.
  • With a wooden spoon, mix your dry ingredients into the wet ingredients.
  • Gently fold in your quick oats.
  • If you would like to add raisins or chocolate chips you can fold in approx. 1/2 cup (more or less, to your liking)
  • Scoop about 1 tablespoon size of cookie dough and place onto the cookie sheet. lightly press the dough down about halfway.
  • Bake for about 8-10 minutes
  • Let them cool for a minute or so on the pan, and then transfer them onto a cooling rack.
  • ENJOY!

Notes

  • Once the dough has been mixed, you can pop it into the fridge for about an hour. This will help prevent the cookie from spreading too much when baking and create a chewier cookie.
