Four Leaf Clover Rice Krispies Treat

St. Patrick’s Day Rice Krispie Treats, in cute little clover shapes.  These yummy marshmallowy dreams are made with the classic Rice Krispie Treat recipe, and just a touch of green food colouring, to get into the St. Patrick’s Day spirit. They are kid-friendly too, making it easy for my 6-year-old to help me make them.

St. Patrick’s Day Rice Krispie Treats

Rice Krispie treats are great for any occasion. They make a great alternative treat for anyone with an egg sensitivity too. With a couple of substitutions, they can also be dairy and gluten-free.

These traditional treats are so popular that you can pretty much find them in any local store, but let’s be honest here, nothing beats a homemade Rice Krispie treat. That buttery, marshmallow taste alongside the crunchy Rice Krispies cereal, makes them so irresistibly good.

The fun thing about Rice Krispie treats is that it can be cut and molded into different kinds of creative shapes. Using a simple cookie cutter, you can cut them into any themed shape of your choice, making it a great option on your next sweet table.

For these Four-Leaf Clover shaped treats, this cookie cutter and a couple of drops of green food colouring gel made ordinary Rice Krispie treats into fun St. Patrick’s Day desserts.    

What are the ingredients in these Rice Krispy treats?

Here is a list of the ingredients you will need

Ingredients

  • 1/4 cup of butter

  • 40 regular size marshmallows, or 5 cups of mini marshmallows

  • 1/2 tsp of vanilla extract

  • 6 cups of Kellogg’s Rice Krispies

  • green food colouring gel

  • flour leaf clover cookie cutter

  • 9 x 11 pan

How to make these St. Patrick’s Day-themed Treats

1.  Measure out all of your ingredients, so you are ready to go.

2.   In a large size pot, melt your butter over low heat.

3.  Add marshmallows and stir until melted and well blended.  Remove from heat.

4.  Stir in vanilla and green food gel.  Once gel and vanilla are fully mixed into marshmallows are fully mixed add the Rice Krispies cereal.  Stir until all the cereal is fully coated with the marshmallow mixture. 

5.  Using a buttered spatula pour your mixture into your buttered prepared pan.  I used cling wrap to line the pan first, then buttered it, for easy lift. The trick to making soft treats is to not pack down the mixture. Instead, softly spread out the Rice Krispie treats with your spatula.

6.  Cut into Four-leaf clovers with a cookie cutter and decorate.   

I loved making these Rice Krispie treats with my little guy.  We had so much fun cutting them into Four- Leaf Clovers.  He was such a big help. He even put little faces on some of them. So cute!

You can easily cut this recipe in half.  I used half the recipe when making these clovers, and they came out great!

Ingredients

  • 5 cups miniature marshmallows or 40 regular size marshmallows

  • 1/2 teaspoon vanilla extract

  • 6 cups Rice Krispies

Directions

  • Melt butter in a large saucepan over low heat.
  • Add marshmallows and stir until melted and well blended. Remove from heat.
  • Stir in vanilla and green food colouring. Add in Rice Kripies cereal and stir until evenly coated
  • Using a lightly-buttered spatula, press into a buttered 9 x 13″ pan. Cool, then cut into shapes.

Notes

  • Kellogg’s Rice Krispie now has a gluten-free cereal, making it easy to make these yummy treats gluten-free.
