Mini Strawberry Shortcake Cups

I can’t wait until July comes, Strawberry season! I guess I was getting the itch when I was inspired to make these little strawberry shortcake cups for my son’s birthday party. He thought they were a great idea for his friends , so they can just grab them and enjoy.

These individual cake cups are perfect for any party. Easy to make and super yummy. Instead of making a scratch cake, I cheated a bit on these. I used French Vanilla cake mix from Betty Crocker. This cake mix is probably my kids FAVORITE, out of the box, cake mix out there. Simple to make, bakes quickly, and not to mention, really yummy too. This was the cake of their choice for their birthday so I couldn’t argue with that. I suggested other options, but this one comes out the winner when making these little cups.

This fun and fresh dessert will be sure to delight all your guest.

Ingredients

  • Making the cake
  • 1 box of Betty Crocker French Vanilla cake mix

  • 1 cup water

  • 1/2 cup Vegetable oil

  • 3 Eggs

  • For the strawberry shortcake cups
  • 1-1/2 cups thawed Cool Whip Whipped Topping

  • 1 pkg of Jell-O Vanilla Instant Pudding

  • 1 cup of milk

  • 1 large container of strawberries

  • 12 mini mason jars

Directions

  • Make cake as directed on the box. Let cool on a wire rack for at least an hour.
  • Wash and cut strawberries into small pieces. Set aside.
  • Beat pudding mix and 1 cup of milk with a whisk for 2 min. Fold pudding into Cool Whip. Let stand 5 min.
  • Start to layer the mason jars by cutting the cake into small square pieces and placing them at the bottom of the jar. Then, using a piping bag or a small spoon, add a layer of the Cool Whip mixture. Then top with a layer of strawberries. Repeat another layer of cake and Cool Whip mixture, and finish with a few strawberries on the top.
