I was on the hunt to find a quick and easy carrot cake recipe, but it had to taste really yummy too. I wanted a recipe that had simple ingredients that I already had in my home. I searched online and found this great recipe here. The recipe was altered to make a small cake for two, but I needed a bit more cake than that for our upcoming family get-together. So, I doubled the recipe and out came this great tasting cake, enough for our Sunday family gathering. I baked the cake in an 8″ round cake pan. The cake is quite rustic looking so I covered the entire cake with cream cheese frosting and used walnuts to decorate the top of the cake to pretty it up. It is not a very high rising cake, so if you are looking for a taller cake I would suggest baking two cakes. Layer them using this delicious cream cheese frosting. This frosting really is so yummy. It pulls all those traditional carrot cake flavours together creating a really delicious simple cake that I’m sure your family will love too.

A deliciously sweet and moist Carrot cake accented with a light and fluffy Cream cheese frosting.

Ingredients

  • 1 cup all-purpose flour

  • 1 teaspoon baking soda

  • 1 teaspoon cinnamon

  • 1 teaspoon allspice

  • 1/2 teaspoon salt

  • 1 cup granulated sugar

  • 1/2 cup vegetable oil

  • 2 Large eggs

  • 1 1/3 cup loosely packed grated peeled carrots

  • Frosting
  • 1/2 cup cream cheese at room temperature

  • 1/2 cup unsalted butter at room temperature

  • 1/2 teaspoon vanilla extract

  • 1 1/3 cups sifted powdered sugar

  • Pinch of Salt

Directions

  • Preheat oven to 350ºF. Lightly grease 8″ round baking pan
  • In a small bowl, whist together flour, baking soda, cinnamon, allspice, and salt.
  • With the blender, whisk together sugar, vegetable oil, and eggs until well combined. Stir in flour mixture and use a rubber spatula to fold in grated carrots. Transfer batter to prepared baking dish.
  • Bake for 35-40 minutes, until toothpick inserted into the center of the cake comes out clean. Let cake cool in pan for about 15 min. Remove cake from pan and cool onto a cooling rack completely before frosting. About 45 min.
  • Cream Cheese Frosting
  • In a mixer, whisk together cream cheese, butter, and vanilla on high speed until smooth and light. Add sifted powdered sugar and salt. Mix until well-combined and fluffy. Spread frosting over the cake. Chill before serving.
  • Use chopped walnuts to decorate the cake to your liking.
