Sweet and Simple Sugar Cookies

This is probably one of the best sugar cookie recipes I have ever used. Growing up my Aunt would always make these delicious cookies for us on special holidays, and we as kids would gobble them all up. They were super soft on the inside with a wonderfully sweet taste.

She kindly shared the recipe with me years ago and I continue to use it to this day. I have made a few minor tweaks but it is still the same amazing sugar cookie I remember growing up with when I was little. I use this recipe for all of my themed cookies. Here are some examples of my iced sugar cookies.

Ingredients

  • 3/4 cup butter softened (at room temperature)

  • 1 cup white sugar

  • 2 Eggs

  • 1/2 tsp vanilla extract

  • 2 1/2 cups flour

  • 1/2 tsp baking powder

  • 1/2 tsp salt

Directions

  • In a medium size bowl stir together the flour, baking powder, and salt. 
  • In a separate large bowl, cream together butter and sugar until smooth.  Beat in eggs and vanilla. 
  • Stir the dry ingredients into the butter mixture.  Don’t over mix. 
  • Cover and chill dough for at least one hour. I make mine the night before and then I’m ready to start baking the next day. 
  • When you are ready to start baking, first pre-heat the oven to 350º. Then roll and cut out shapes between 1/4″ and 1/2″ thick, and place on a cookie sheet, lined with parchment paper. 
  • Bake for about 6 to 8 minutes or until the bottom of the cookie is just slightly light brown in colour.
